Mechanical harvest at night optimising the aromatic maturity of each grape variety.
After de-stalking, grapes are softly pressed with pneumatic membrane and the must is then clarified. Juice is fermented in tank at 14°C and aged on fine lees for 3 months.
The “prise de mousse” is the Charmat Method
